2 ingredient salad so simple yet so good

Ingredients

  • 4 cups purple / red cabbage (finely shredded)
  • 1 Large carrot (grated)
  • Handful of chopped mint leaves or spring onion or chopped fresh parsley or chopped fresh coriander

Dressing:

  • 2 tbsp fresh lemon juice
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar or either red or white wine vinegar
  • Pinch of salt and pepper

How?

  • Combine salad ingredients in a bowl
  • Mix the dressing and add to the salad, toss to combine.

This is a great salad to vary the herbs (either parsley, coriander, mint and so on) to find the one you like best. Also vary the dressing portions slightly to your taste.

This salad combination also works great with a peanut or soy dressing. Try different ones to find what works best for you.
