Basic salad jar

Ingredients

  • 1 carrot
  • 5 cherry tomatoes
  • Handful chopped red cabbage
  • Handful sliced cucumber
  • 1/4 can chickpeas (drained and rinsed)
  • Approx Tbsp chopped coriander or pasley

Dressing

  • Tsp olive oil
  • Tsp lemon or lime juice
  • Tsp white wine vinegar
  • Pinch of salt and pepper

Why?

Great way to get extra protein and keep you going

How?

This makes a snack / lunch for 1, it can be scaled up and added to multiple jars.

Best to get a jar with a lid, but you can also use tupperware boxes

  • Grate and peel the carrot, wash the lettuce and chop the tomatoes
  • Mix the dressing

Add the ingredients in the following order: (leaving a few chickpeas to rest on the top)

  1. Layer most of the chickpeas on the bottom
  2. Add red cabbage
  3. Add grated carrot
  4. Chopped coriander
  5. Sliced cucumber
  6. Add tomatoes
  7. Pour over dressing
  8. Put lid on

No need to shake as it will shake up itself as you travel or if you pour out.

Additional options

Too many options to choose here, there are so many variations from replacing chickpeas with quinoa to roasting the chickpeas beforehand.
