Butternut squash soup

Ingredients

  • 1 Butternut squash
  • 1 Onion
  • 1 Clove garlic
  • 750ml vegetable stock

Why?

Soups for me have always been a bit of a mystery and seemed a little complicated. Once you get over this hurdle by trying this recipe, using your blender, you will realise that to make a soup the whole family will enjoy within 20/25 mins is so easy, you might even try different combinations and find more ways to enjoy soup

How?

Peel and cut the butternut squash into chunks about an inch thick. remove the seeds. Roughly slice the onion, and fry with a little oil on a medium to high heat until it goes translucent (about 5 mins). Crush and add the garlic and fry until you can smell the garlic. Add the butternut squash and continue to fry for a minute, stirring to coat the mix. You can also add some spices of your choice at this point. Add the stock until the liquid just covers the butternut squash. Bring to a simmer for about 20mins or until the butternut squash is soft.

Ladle into a blender, and blend for a minute until smooth. Return to the pan and keep warm. Serve with bread

Serve with

  • Roast the butternut squash seeds and sprinkle on top
  • Pumpkin seeds
