Cauliflower Burger

Ingredients

  • Medium cauliflower
  • Smoked paprika
  • Olive oil
  • Soy sauce
  • Salt and pepper
  • Sriracha (optional)

Pickled onions

  • 1 red onion
  • Salt
  • Juice of lime

How?

Trim and remove the leaves from the cauliflower (you can roast the leaves as well, they taste great)

Either slice the head into steaks about half and inch thick or split the head into florets and slice them so they have a flat side.

  • Rub the cauliflower in olive oil
  • Rub in smoked paprika and salt and pepper (you can use a rub of your choice here, or even a marinade)
  • Heat a pan on the hob (pan should also be oven proof) with a little oil
  • Place the cauliflower in once hot and push down with a spatula or the bottom of another pan
  • Turn over and repeat on the other side, let sizzle for a few minutes
  • When looking a little charred, add a tbsp of soy sauce and keep cooking on the hob
  • Once the soy sauce is absorbed, place the cauliflower in the oven at 180C / 350 for about 10mins

Pickled onions

  • Peel and slice the red onion
  • Place in a tupperware container (with a lid)
  • Pour over juice of 1 lime
  • Liberally sprinkle over salt, place lid on and shake.
  • Let sit for about 10 mins or longer if possible (can be overnight)

Serve the cauliflower on a toasted bun with onions and sauce of choice and eat well

Additional options

Adding roasted cauliflower leaves is a great addition. Simply place leaves in a pan and pour over a little oil and sprinkle with salt and pepper, then roast until golden and crispy (about 15mins)

This 'burger' tastes great on its own, but the addition of various sauces can add a little extra spice.
