Courgette salad

Ingredients

  • 1 Courgette
  • 1 Lemon
  • 1/2 cup mint leaves
  • Tbsp olive oil
  • 1/3 cup plant based parmesan alternative

Why?

Courgette (aka Zuchini) I believe is an under appreciated vegetable. Certainly my memories of courgette in dinners, was always overcooked and soggy, so why cook it! I love this salad, its a great side dish, but also works great on its own, add some protein such as fake chicken and its a really nice lunch or dinner.

How?

Use a peeler to slice the courgette length ways. Pour over the olive oil (dont be shy), add grated lemon zest and then the juice from the lemon. Slice up the mint leaves and throw in and massage with your hands. Add the cheese on top and serve, possibly with a little extra drizzle of oil.
