Creamy mushroom pasta

Ingredients

  • 150g mushrooms, sliced
  • 1 small onion, sliced
  • A spring of thyme or rosemary
  • Tbsp vegan cream cheese (or non vegan)
  • 1 Tsp smoked paprika
  • Pinch salt and pepper to taste
  • Olive oil
  • Portion of dried pasta

Why?

Great dinner for one or more, super simple, yet restaurant quality.

How?

  • Preheat oven to 180C/360F
  • Put pan of salter water on hob to boil
  • Place sliced mushrooms and onion into an oven proof dish
  • Sprinkle with tsp paprika and other dried herbs of choice to taste
  • Drizzle with oil and mix together so well combined
  • Place cream cheese on top and place in oven for 15mins
  • Put portion of pasta in boiling water and cook until done.
  • Drain pasta and retain some of the water
  • Remove dish from oven, pour over past with a little of the pasta water, mix well.

Serve with some fresh basil or some nutritional yeast. Enjoy and eat well
