Creamy mushroom pasta
Ingredients
- 150g mushrooms, sliced
 - 1 small onion, sliced
 - A spring of thyme or rosemary
 - Tbsp vegan cream cheese (or non vegan)
 - 1 Tsp smoked paprika
 - Pinch salt and pepper to taste
 - Olive oil
 - Portion of dried pasta

Why?
Great dinner for one or more, super simple, yet restaurant quality.
How?
- Preheat oven to 180C/360F
 - Put pan of salter water on hob to boil
 - Place sliced mushrooms and onion into an oven proof dish
 - Sprinkle with tsp paprika and other dried herbs of choice to taste
 - Drizzle with oil and mix together so well combined
 - Place cream cheese on top and place in oven for 15mins
 - Put portion of pasta in boiling water and cook until done.
 - Drain pasta and retain some of the water
 - Remove dish from oven, pour over past with a little of the pasta water, mix well.
 
Serve with some fresh basil or some nutritional yeast. Enjoy and eat well
