French toast

Ingredients

  • 3 Tbsp cornstarch (cornstarch to help the batter crisp up)
  • 1/2 cup almond milk (could also use oat, soy or coconut milk)
  • 2 tsp maple syrup or agave or date syrup
  • 1 tsp vanilla extract
  • pinch sea salt
  • 1 tsp ground cinnamon
  • 1 Tbsp mashed ripe banana (adds texture
  • 1 dash ground turmeric (optional - for colour)

Bread

  • 2 large slices of sourdough (ideally, but any bread will do)
  • vegan butter or your preferred spread

Why?

French toast is a great brunch option, if you are trying vegan, this is a great option

How?

  • To a shallow bowl or baking dish add 3 tbsp cornstarch, whisk in the 1/2 cup plant based milk slowly until no lumps.
  • Then add 2 tsp maple syrup, tsp vanilla extract, pinch salt, tsp cinnamon, ripe mashed banana and turmeric if using. Whisk it all to combine.
  • Heat a pan on the hob to medium high heat
  • Dip the bread in the mixture, leaving for 15-20 seconds on each side so the bread is nicely soaked
  • Add a little butter or olive oil to the hot pan
  • Place in the bread and cook on each side until golden (about 2 mins each side)
  • Remove and serve with your choice of toppings
