French toast
Ingredients
- 3 Tbsp cornstarch (cornstarch to help the batter crisp up)
 - 1/2 cup almond milk (could also use oat, soy or coconut milk)
 - 2 tsp maple syrup or agave or date syrup
 - 1 tsp vanilla extract
 - pinch sea salt
 - 1 tsp ground cinnamon
 - 1 Tbsp mashed ripe banana (adds texture
 - 1 dash ground turmeric (optional - for colour)
 
Bread
- 2 large slices of sourdough (ideally, but any bread will do)
 - vegan butter or your preferred spread

Why?
French toast is a great brunch option, if you are trying vegan, this is a great option
How?
- To a shallow bowl or baking dish add 3 tbsp cornstarch, whisk in the 1/2 cup plant based milk slowly until no lumps.
 - Then add 2 tsp maple syrup, tsp vanilla extract, pinch salt, tsp cinnamon, ripe mashed banana and turmeric if using. Whisk it all to combine.
 - Heat a pan on the hob to medium high heat
 - Dip the bread in the mixture, leaving for 15-20 seconds on each side so the bread is nicely soaked
 - Add a little butter or olive oil to the hot pan
 - Place in the bread and cook on each side until golden (about 2 mins each side)
 - Remove and serve with your choice of toppings
