Oat and banana fluffy pancakes

Ingredients

  • 2 cups rolled oats
  • 1 cup plant based milk
  • 1/2 cup water
  • 1 tbsp apple cider vinegar
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 2 medium ripe bananas
  • Oil for greasing pan

How?

For best results use a blender, if you don't have access to one you can mix the ingredients in a bowl, only the texture will not be as smooth.

  • Add all the ingredients into a blender (except oil) and blend until smooth
  • If you want to add additional ingredients to the batter (blueberries for example) fold them in once blended
  • Heat a large non stick pan on medium to high heat, spay or wipe a little oil in the pan.
  • Using a ladle or large spoon place a portion of the batter into the hot pan.
  • As bubbles are created on the top (usually about 3 mins) turn the pancake and cook on the other side and both sides are golden
  • Repeat until all batter is used, you may need to add a little oil for each pancake

You can serve, eat and cook to order, or put in a warm over to keep warm as you make them all
