One bowl vegan banana bread

Ingredients

  • 4 ripe bananas
  • 1/4 cup plant based milk (soy, almond or oat)
  • 1/4 vegetable oil (soy bean or sunflower)
  • 1 tbsp apple cider vinegar
  • 2 tsp vanilla extract
  • 3/4 cup dark brown sugar
  • 2 cups plain flour
  • 1 1/2 tsp baking soda (bicarbonate)
  • 2 tsp ground cinnamon
  • 1/2 tsp salt

Why?

Great with some ice cream or a cup of tea

How?

  • Preheat oven to 180C (350F)
  • Line 9x5 loaf tin with greaseproof paper
  • Peel four bananas and mash with a fork in the bowl
  • Add wet ingredients (1/4 cup plant based milk, 1/4 cup oil, tbsp apple cider vinegar, 2tsp vanilla extract)
  • Add 3/4 cup dark brown sugar
  • Use fork or wooden spoon to mash and combine until all big lumps gone
  • Add 2 cups flour, 1 1/2 tsp baking soda, 2 tsp cinnamon and 1/2 tsp salt
  • Fold in dry ingredients until all combined
  • At this point you can also add a handful of optional choc chips or raisins or both if you like
  • Transfer batter to loaf tin and place in oven
  • Bake for 45 mins and check with knife (if knife clean when removed, take out of oven and let cool)
  • If knife not clean, keep baking until done.

Additional options

To give a little extra, you can add

  • Chocolate chips
  • Crushed cadburys mini eggs
  • Raisins or sultanas
  • Top with drizzle of royal icing (icing sugar and a little water combined)
