Quick easy bean burritos

Ingredients

  • 1 onion, finely chopped
  • 1 carrot, finely chopped or grated
  • 2 cloves garlic, finely chopped
  • 1 can (220g) kidney beans or black beans
  • 1 Tbsp tomato paste
  • 1 Tsp each cumin, paprika, oregano, chili
  • salt to taste

Why?

Almost easier than going to a cafe and buying one

How?

  • Fry garlic onion and carrot for a few mins
  • Add the kidney beans , tomato paste and spices.
  • Slightly mash it.

Take 2 tortillas and add guacamole (or simply avocado), lettuce, tomatoes.

Fill your burrito, roll it and eat or toast it and then eat.

  • Cooked rice (make sure not more than a day old)
  • Vary the spices as you prefer
