Crunchy, super tasty brussels sprouts

Ingredients

  • Brussels sprouts
  • Olive oil
  • Nutritional yeast
  • Salt + pepper

Why?

An great side dish or addition to a roast

How?

I've not added measures in the ingredients list, as this can come down to your personal preference.

  • Clean the sprouts and ideally make a cross cut at the bottom of each one
  • Add to a pot of boiling water and par boil until they are soft (about 15mins)
  • Rinse the sprouts under cold water to stop the cooking process and leave to dry
  • Pre heat oven to 185C / 375F
  • Place sprouts in a bowl and cover with olive oil, yeast extract, salt and pepper and give a good mix
  • Place sprouts on a baking tray then squash each sprout flat with the bottom of a glass or some flat object. This squeezes out the water and helps with the crunch
  • Place in the oven and bake until crispy and golden
  • Remove, serve with a little extra nutritional yeast / salt and pepper
  • Eat well!

Additional options

  • Feel free to add additional spices to the mix
  • You can also cover with various plant based cheeses after baking
  • Crushed nuts also go well
