Sweet potato bruschetta
Ingredients
- 2 large sweet potatoes
 - olive oil
 - salt, pepper, rosemary and thyme

Quick, simple and easy ways to use sweet potato 
How?
- Preheat oven to 200C / 400F
 - Wash sweet potatoes and slice them into rounds at least half an inch thick
 - Brush or rub olive oil into each slice
 - Sprinkle over the rosemary, salt, pepper and thyme (or herbs / spices of your choice)
 - Roast in oven for 25/30 mins or until golden
 
Serve and eat well
