Sweet potato bruschetta

  • 2 large sweet potatoes
  • olive oil
  • salt, pepper, rosemary and thyme

Quick, simple and easy ways to use sweet potato

How?

  • Preheat oven to 200C / 400F
  • Wash sweet potatoes and slice them into rounds at least half an inch thick
  • Brush or rub olive oil into each slice
  • Sprinkle over the rosemary, salt, pepper and thyme (or herbs / spices of your choice)
  • Roast in oven for 25/30 mins or until golden
