Spinach tofu scramble

Ingredients

  • Approx 12oz (340g) silken tofu
  • 1 tbsp extra virgin olive oil
  • 2 spring onions chopped
  • 1 clove garlic, crushed and sliced
  • 1 cup spinach
  • 1 tsp turmeric
  • 1/2 tsp cumin
  • Pinch salt and black pepper

Why?

Tofu is really good for you, and when made this way, tastes great too

How?

  • Drain the tofu in a sieve and set to one side
  • Place oil in pan and heat on medium heat
  • Add chopped onions and cook for a few mins until they start to soften
  • Add the chopped garlic clove, continue to cook for a minute, or until you smell the garlic aroma
  • Add the tofu and using the back of a fork and break it down
  • Add the tsp turmeric and 1/2 tsp cumin and stir
  • Add the spinach, cook and stir until spinach has wilted
  • Season to taste

Serve with slices of buttered toast (ideally sourdough if available)

  • Roasted tomatoes
  • Sliced avocado (with a little lime and fresh coriander)
  • Can also be used in a mini poke bowl
