Spinach tofu scramble
Ingredients
- Approx 12oz (340g) silken tofu
 - 1 tbsp extra virgin olive oil
 - 2 spring onions chopped
 - 1 clove garlic, crushed and sliced
 - 1 cup spinach
 - 1 tsp turmeric
 - 1/2 tsp cumin
 - Pinch salt and black pepper

Why?
Tofu is really good for you, and when made this way, tastes great too
How?
- Drain the tofu in a sieve and set to one side
 - Place oil in pan and heat on medium heat
 - Add chopped onions and cook for a few mins until they start to soften
 - Add the chopped garlic clove, continue to cook for a minute, or until you smell the garlic aroma
 - Add the tofu and using the back of a fork and break it down
 - Add the tsp turmeric and 1/2 tsp cumin and stir
 - Add the spinach, cook and stir until spinach has wilted
 - Season to taste
 
Serve with slices of buttered toast (ideally sourdough if available)

Goes great with a range of additional items:
- Roasted tomatoes
 - Sliced avocado (with a little lime and fresh coriander)
 - Can also be used in a mini poke bowl
