Vegan cookie dough

Ingredients

  • 250g chickpeas (a little over half a can), drained and rinsed
  • 1/2 cup cashew butter or peanut butter or almond butter
  • 3/4 cup oat flour or rolled oats
  • 1/4 cup maple syrup or Agave
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips
  • pinch of salt

Why?

Its cookie dough!

How?

  • Add all ingredients to food processor except choc chips
  • Blend until smooth, add more flour if needs to be thicker, or plant based milk to thin as needed
  • Remove from food processor and add to a bowl
  • Fold in choc chips, so long as mixture is not too warm

Serve as you deem necessary!

Serve with

  • Mix into ice cream
  • On its own
  • With strawberries / raspberries
  • Sandwich between biscuits
